After travelling extensively in the early 1990s, Lee returned to Australia to pursue tourism studies at The University of Queensland. In 2000 Lee was awarded her doctorate which focused on backpacker tourism. Since then Lee has been a lecturer in the School of Tourism where she has been actively engaged in research, teaching and community projects.

Lee's research interests examine backpacker travel, tourist motivation and volunteerism. Recent projects include:
- Backpacker market: Profiles of backpacker markets at both national and local levels
- Tourist motivation: Holiday motivations and behaviours of people over time
- Volunteerism: Motivations of long-term volunteers at events
